Wait… it’s summer? But it was just March like two seconds ago! Aw crap, there goes that resolution!

Seriously! Where did the last four months go!?!? I mean really, the fact that I can’t hit my once a month posting goal is kind of sad… oh well, why carry a grudge!

So…. it’s summer! There’s that! The kids actually got out about 3 weeks ago, but I have been tied up in end of the year professional developments. Tomorrow is my last day of that and then I really get to relax! (insert sarcastic tone, look, and laugh here) Anyway… in between continuing my Master’s work and entertaining my two little monkeys, you can be sure that I will be squeezing in some good times and good food!

It has been hot… I mean HOT, and after sitting in a humid and stale multipurpose room for the last couple of days I did not feel like spending a lot of time in my kitchen over a stove. As I stared into the abyss that is my refrigerator pondering actually applying myself towards some sort of meal creation verses ordering Thai, I was inspired by a few fresh ingredients in my crisper drawer. Fifteen minutes later, voilá… a fresh summer salad! On a wine note… go Sauvignon Blanc with this… you won’t regret it.

Summer Peachy Greens (serves 2)SummerPeachyGreens

3 cups baby arugula

2 peaches, sliced

1/4 cup walnuts, chopped

1 cooked chicken breast (I poached mine)

Salt & Pepper

Olive oil and white balsamic

Sauvignon Blanc (I enjoyed a Retzlaff 2010)

1. It is hot, so take a sip of your nice cool and crisp Sauv. Blanc.

2. Arrange arugula, peaches, chicken, and nuts on two plates. Season to taste with salt and pepper.

3. Have another sip of that Sauv.

4. Drizzle with olive oil and vinegar – I use our local Victorine Cranberry Pear White Balsamic and Blood Orange Olive Oil, which were delightful – feel free to use your favorites!

5. Go sit in a nice shady spot with a breeze in your backyard and enjoy your salad and glass of wine!
